Savory Baked Mushroom Rockefeller Recipe

Ingredients

  • 3 TB butter, divided

  • 1/3 cup breadcrumbs

  • 1/3 cup grated Parmesan cheese

  • 3 cloves minced garlic

  • 3 cups fresh spinach

  • 1/2 cup fresh parsley

  • 3 tsp fresh thyme

  • Juice of 1/2 lemon

  • 1 cup heavy cream

  • 1/2 tsp each salt and pepper

  • 8 oz mushrooms — pink, golden and blue varieties work best

How To Make Mushrooms Rockefeller

1. Prepare the breadcrumb topping
Preheat the oven to 400°F. Separate the butter into 3 equal parts. Combine 1 TB melted butter with the breadcrumbs and Parmesan cheese. Set aside.

2. Prepare the spinach mixture
In an ovenproof skillet (8–10 inches), heat 1 tablespoon of the butter over medium heat. When the butter melts, cook the garlic for 1 minute. Add the spinach and parsley and cook until wilted. Remove the mixture from the heat and set aside.

3. Assemble the mushrooms
Add the remaining tablespoon of butter to the skillet. Stir in the mushrooms, thyme, salt and pepper. Add the lemon juice and stir. Arrange the mushrooms in a layer. Pour the heavy cream over the mushrooms, then spoon the spinach mixture over the top. Sprinkle the breadcrumb mixture evenly over the skillet.

4. Bake
Bake at 400°F for 10–15 minutes, until the breadcrumbs are golden brown.

5. Serve
Remove from the oven and enjoy!
