Crispy Lion's Mane Mushroom Crab Cake Recipe
These Lion's Mane Mushroom "Crab Cakes" are a crispy, flavorful vegetarian alternative to traditional crab cakes. Made with fresh lion's mane mushrooms, panko breadcrumbs, herbs and seasonings, they're easy to prepare and packed with savory mushroom flavor. Serve them as an appetizer, lunch or a delicious meat-free dinner.
Ingredients
1 large egg
¼ green onion, finely sliced
2 TB parsley, finely chopped
2 TB mayonnaise or Greek yogurt
2 tsp Dijon mustard
1½ tsp Worcestershire sauce
1 tsp Old Bay seasoning
1 lemon, zest and juice, plus wedges for serving
1 shallot, minced
1 red bell pepper, small dice
½ cup panko breadcrumbs
8 oz lion's mane, shredded by hand
Kosher salt and black pepper
How to Make Lion's Mane Mushroom "Crab Cakes"
1. Prepare the Lion's Mane
Gently hand-shred the Lion's Mane mushrooms into small pieces rather than chopping them. This helps give the finished cakes a flaky, crab-like texture. Set the shredded mushrooms aside in a medium bowl.
2. Prepare the mixture
In a large bowl, whisk together the egg, breadcrumbs, green onion, parsley, mayonnaise or Greek yogurt, Dijon mustard, Worcestershire sauce, Old Bay seasoning, lemon zest and juice, shallot, and red bell pepper.
3. Combine the ingredients
Gently mix the shredded Lion's Mane mushrooms and panko breadcrumbs into the mixture until everything is well combined.
4. Form the crab cakes
Form the mixture into 6 equal-sized patties, approximately ½ inch thick.
5. Chill
Place the patties on a parchment-lined baking sheet and refrigerate for 30 minutes so they can set.
Tip: The crab cakes can also be formed a day ahead. Cover and refrigerate until ready to cook.
6. Preheat the air fryer
Preheat your air fryer to 400°F.
7. Prepare for cooking
Lightly spray the inside of the air fryer basket with olive oil cooking spray. Place the crab cakes in the basket without overcrowding them, and lightly spray the tops with cooking spray.
8. Air fry
Cook for approximately 8 minutes, or until the crab cakes are golden brown and crisp on the outside. Carefully flip the patties halfway through cooking and continue cooking until done.
9. Serve
Serve warm with lemon wedges and your favorite dipping sauce.
