Easy Shiitake Mushroom Stir Fry Recipe
This easy shiitake mushroom stir fry is packed with savory flavor and comes together quickly for a simple weeknight meal. Tender shiitake mushrooms are sautéed with colorful vegetables and tossed in a flavorful stir-fry sauce for a delicious dish that pairs perfectly with rice or noodles.
Ingredients
8 oz fresh shiitake mushrooms, stems removed and sliced
2 tbsp vegetable oil or olive oil
1 cup broccoli florets
1 red bell pepper, thinly sliced
1 small carrot, julienned
½ cup snow peas or sugar snap peas
3 cloves garlic, minced
1 tsp fresh ginger, grated
3 tbsp soy sauce
1 tbsp honey
1 tbsp sesame oil
1 tbsp rice vinegar
½ tsp Shroom-Mates Umami Mushroom Seasoning
¼ tsp red pepper flakes, optional
2 green onions, sliced
1 tbsp sesame seeds
Cooked white or brown rice, for serving
Directions
1. Prepare the sauce
In a small bowl, whisk together the soy sauce, honey, sesame oil, rice vinegar and Umami Mushroom Seasoning. Set aside.
2. Cook the shiitake mushrooms
Heat the oil in a large skillet or wok over medium-high heat. Add the shiitake mushrooms and cook for 4–5 minutes, stirring occasionally, until browned and tender.
3. Add the vegetables
Add the broccoli, bell pepper, carrot and snow peas. Stir-fry for 4–5 minutes, keeping the vegetables slightly crisp.
4. Add garlic and ginger
Stir in the minced garlic and fresh ginger. Cook for 30–60 seconds, until fragrant.
5. Add the sauce
Pour the stir-fry sauce over the mushrooms and vegetables. Toss everything together and cook for 1–2 minutes, allowing the sauce to coat the vegetables.
6. Finish the stir fry
Remove from heat and sprinkle with sliced green onions and sesame seeds. Add red pepper flakes if you want a little extra heat.
7. Serve
Serve the shiitake mushroom stir fry immediately over steamed white or brown rice. It also pairs well with noodles.
