Easy Homemade Shiitake Mushroom Soup Recipe
This easy shiitake mushroom soup is warm, comforting and packed with rich savory flavor. Tender shiitake mushrooms simmer with garlic, onion and herbs in a flavorful broth to create a simple homemade mushroom soup that's perfect for a cozy lunch or dinner.
Ingredients
16 oz fresh shiitake mushrooms, stems removed and sliced
1 tbsp olive oil
1 tbsp unsalted butter
1 small yellow onion, diced
3 cloves garlic, minced
2 carrots, diced
2 celery stalks, diced
6 cups vegetable or chicken broth
1 tsp Shroom-Mates Umami Mushroom Seasoning
½ tsp dried thyme
½ tsp dried parsley
½ tsp salt, or to taste
¼ tsp black pepper
1 tbsp fresh parsley, chopped
Optional: 1 tbsp soy sauce
Optional: crusty bread for serving
Directions
1. Prepare the mushrooms
Clean the shiitake mushrooms, remove the stems and slice the caps.
2. Sauté the vegetables
Heat olive oil and butter in a large pot over medium heat. Add the onion, carrots and celery and cook for 5–6 minutes, until they begin to soften.
3. Add garlic and mushrooms
Stir in the garlic and sliced shiitake mushrooms. Cook for 3–4 minutes, allowing the mushrooms to soften and develop flavor.
4. Add the broth and seasonings
Pour in the broth and add the Umami Mushroom Seasoning, thyme, parsley, salt and black pepper. Add soy sauce if desired.
5. Simmer the soup
Bring the soup to a gentle boil, then reduce the heat and simmer uncovered for 20 minutes, allowing the mushrooms and vegetables to become tender.
6. Finish the soup
Taste and adjust the seasonings as needed. Stir in fresh parsley just before serving.
7. Serve
Ladle the hot shiitake mushroom soup into bowls and serve with crusty bread for dipping.
