Easy Creamy Shiitake Mushroom Pasta Recipe
This creamy shiitake mushroom pasta is an easy, comforting meal packed with savory flavor. Tender shiitake mushrooms are sautéed with garlic and herbs, then tossed with pasta in a rich, creamy sauce. It’s a simple mushroom pasta recipe that comes together quickly for a delicious weeknight dinner.
Ingredients
Creamy Shiitake Mushroom Pasta
12 oz fettuccine or linguine
8 oz fresh shiitake mushrooms, stems removed and sliced
2 tbsp olive oil
2 tbsp unsalted butter
4 cloves garlic, minced
1 small shallot, finely diced
1 cup heavy cream
½ cup grated Parmesan cheese
½ cup reserved pasta water
½ tsp Shroom-Mates Umami Mushroom Seasoning
½ tsp Italian seasoning
½ tsp salt, or to taste
¼ tsp freshly cracked black pepper
2 tbsp fresh parsley, chopped
Extra Parmesan for serving
Optional: ¼ cup dry white wine
Optional: pinch of red pepper flakes
Directions
1. Cook the pasta
Bring a large pot of salted water to a boil. Cook the pasta according to the package directions until al dente. Before draining, reserve ½ cup of pasta water.
2. Sauté the shiitake mushrooms
Heat the olive oil and butter in a large skillet over medium-high heat. Add the sliced shiitake mushrooms and cook for 5–7 minutes, stirring occasionally, until they are golden brown and tender.
3. Add the aromatics
Add the diced shallot and minced garlic. Cook for 1–2 minutes, until fragrant. If using white wine, add it now and simmer for about 1 minute.
4. Make the creamy sauce
Reduce the heat to medium and pour in the heavy cream. Stir in the Umami Mushroom Seasoning, Italian seasoning, salt and black pepper. Simmer gently for 2–3 minutes.
5. Add the Parmesan
Stir in the Parmesan cheese until melted and the sauce becomes smooth and creamy. If the sauce is too thick, gradually add a little reserved pasta water until you reach your desired consistency.
6. Toss with pasta
Add the cooked pasta directly to the skillet and toss until thoroughly coated in the creamy mushroom sauce. Cook for another 1–2 minutes so the pasta absorbs the flavor.
7. Serve
Top with fresh parsley, extra Parmesan and freshly cracked black pepper. Serve immediately while hot.
Recipe Tip
Don't overcrowd the mushrooms while sautéing. Giving the shiitakes plenty of room in the skillet helps them brown instead of steaming, giving the pasta a much deeper mushroom flavor.
